The sandwich people's response to the courgette debacle:

"Hi Catherine

Thanks for your comments. You are right there is nothing wrong with cucumber, we use lots of it. We currently have a salad sandwich in our Simply Nice range, which is simply that - tomato, cucumber, lettuce and cress.

Honey and Mustard Salad Club, was created to be a really nice, fulfilling sandwich, which you wouln't feel cheated by eating. It was to contain one of your five a day portions of vegetables, be very low in fat, low in calories and taste delicious. We used courgettes as opposed to cucumbers to ensure that the sandwich did not go soggy over life, and to add some texture along with the sunflower seeds, without which the sandwich would lack bite.

Cucumber has not been replaced, as it was never destined to go in sandwich.

For cucumber fans, hopefully we will make a cucumber sandwich for a summer afternoon tea special!

A 23 year old journalism film and broadcasting graduate, I'm an avid photographer and painter who is always on the lookout for the perfect mojito cocktail. So far this town has failed me on this. I was born and bred here in Cardiff, though my lack of accent means most people think I'm lying about it. I also like angry girl music of the indie-rock persuasion and most korean/japanese cinema.

I was Health ed on the Gair Rhydd newspaper here at Cardiff (hence the interest in health journalism, which is ironic as I am probably not the best person to preach a healthy lifestyle) and have just finished a gap year during which time I managed the pen section of a local independent giftware store as well as helping maintain their website....badly.

Capturing Cardiff Pitch- Cardiff Violence Prevention Group
